Chef Tang-Qun had his first taste of genuine Hakata-Tonkotsu Ramen in Fukuoka in 2003. He was instantly smitten by the rich, complex flavor of Tonkotsu soup, which he had never tried before. For years, he couldn't forget the flavor. After leaving a top Sushi restaurant in London, he returned to Fukuoka and Yokohama to learn how to make real Ramen with his Japanese wife, who is from Fukuoka. Every day, we paper Ramen with care and love in Scotland, exactly like our Japanese Ramen masters.
